CHICORY?

my french market coffee has chicory in it. got to wondering why this was
added to coffee in the 1st place. what is chicory? was it considered to
be a healthy thing, in the past? i know it is tasty thing:) alice

I thiink chicory and sassafrass are either related or one in the same.

Why did they use it. Probably medicinal, or to make the coffee go farther.

Chicory is a plant (chicorée in french) that you use the leaves in
salads (it's very fresh and crispy, also called "frisée" in Northern
France) and the roots for coffee-like decoction.

I think French people started drinking that during wartime when coffee
import was scarce due to the restrictions, and then after the war they
blended it with real coffee beans.
